Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1 teaspoon oregano
  • 1 can (14.5 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook for 3-4 minutes, until the onion is softened.
  2. Add the jalapeno, cumin, smoked paprika, chili powder, and oregano, and cook for another minute.
  3. Add the crushed tomatoes, vegetable broth, and black beans, and bring to a boil. Reduce the heat to low and simmer for 20 minutes.
  4. Stir in the cilantro, and season with salt and pepper, to taste.
  5. Serve with your favorite toppings and enjoy!
