Ingredients
- 1 cup cooked quinoa
- 1 cup cooked wheat berries
- 1 cup cooked wild rice
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup diced cucumber
- 1 cup diced tomato
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions
- In a large bowl, combine the cooked quinoa, wheat berries, and wild rice.
- Add the bell peppers, cucumber, tomato, and feta cheese, and mix well.
- In a small bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
- Pour the dressing over the salad and mix until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
