Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked wheat berries
  • 1 cup cooked wild rice
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the cooked quinoa, wheat berries, and wild rice.
  2. Add the bell peppers, cucumber, tomato, and feta cheese, and mix well.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
  4. Pour the dressing over the salad and mix until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving.
