Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions

Directions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine zucchini slices, olive oil, garlic powder, salt, and pepper. Toss to evenly coat.
  3. Arrange the zucchini slices on the baking sheet. Sprinkle with Parmesan cheese. Bake for 15 minutes, or until lightly golden and crisp.
  4. Top with cheddar cheese and return to oven for 5 more minutes, or until cheese is melted.
  5. Remove from oven and top with salsa, cilantro, and green onions.
  6. Serve warm and enjoy!
