Ingredients
- 2 medium zucchinis, sliced into thin rounds
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
Directions
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a medium bowl, combine zucchini slices, olive oil, garlic powder, salt, and pepper. Toss to evenly coat.
- Arrange the zucchini slices on the baking sheet. Sprinkle with Parmesan cheese. Bake for 15 minutes, or until lightly golden and crisp.
- Top with cheddar cheese and return to oven for 5 more minutes, or until cheese is melted.
- Remove from oven and top with salsa, cilantro, and green onions.
- Serve warm and enjoy!
