Ingredients
- 1 pound of pork sausage
- 1/2 cup cooked white rice
- 1/4 cup chopped green onions
- 1/4 cup diced red bell pepper
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon Cajun seasoning
- 1/4 cup all-purpose flour
- 2 eggs, lightly beaten
- 1 cup panko bread crumbs
- Vegetable oil for frying
Directions
- In a large skillet, cook sausage over medium heat until no longer pink. Drain fat.
- In a large bowl, mix together cooked sausage, white rice, green onions, bell pepper, cayenne pepper, garlic powder, black pepper, salt, and Cajun seasoning.
- Shape mixture into 1-inch balls and set aside.
- Place flour, eggs, and panko bread crumbs in separate shallow bowls.
- Dip each ball into the flour, then egg, then panko bread crumbs.
- Heat vegetable oil in a deep-fryer to 375 degrees F (190 degrees C).
- Fry boudin balls in hot oil for about 2 minutes or until golden brown. Drain on paper towels.
- Serve hot.
