Ingredients

  • 1 cup gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 teaspoons lemon zest
  • 1 teaspoon green tea powder
  • 1 egg
  • 1/4 cup lemon juice
  • 1/2 cup powdered sugar

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the lemon zest, green tea powder, and egg and mix until combined.
  5. Add the lemon juice and mix until combined.
  6. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  7. Drop tablespoonfuls of the dough onto a parchment-lined baking sheet, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool for a few minutes before transferring to a wire rack to cool completely.
  10. Once cooled, dust the cookies with powdered sugar.
