Ingredients
1 cup all-purpose flour
1 cup oats, toasted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions
Preheat oven to 350°F (175°C).
Toast the oats in a dry skillet over medium heat for about 5 minutes. Set aside.

In a separate bowl, cream together the butter and sugars until light and fluffy.

Scoop the dough onto a baking sheet lined with parchment paper or a silicone baking mat.
Bake for 8-10 minutes or until lightly golden brown.
Remove from oven and let cool before serving.

You can use either old-fashioned oats or quick-cooking oats.
For a sweeter cookie, you can add 1/2 cup of chocolate chips or other mix-ins.
