Ingredients

  • 2 large flour tortillas
  • 1 cup cooked, diced turkey
  • 1/2 cup shredded Cheddar cheese
  • 1/4 cup cranberry sauce
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped pecans
  • Salt and pepper to taste
  • 2 tablespoons butter

Directions

  1. Preheat a large skillet over medium heat.
  2. Lay one tortilla on a flat surface. Spread the turkey, cheese, cranberry sauce, red onion, bell pepper, and pecans over the tortilla. Sprinkle with salt and pepper. Place the other tortilla on top.
  3. Melt one tablespoon of butter in the preheated skillet. Place the quesadilla in the skillet and cook for 2-3 minutes. Flip the quesadilla and add the remaining butter. Cook for 2-3 minutes or until golden brown and crispy.
  4. Transfer the quesadilla to a cutting board. Cut into wedges and serve.
