Ingredients

  • 1 pound lean ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 1 tablespoon tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (14.5 ounces) light coconut milk
  • 1 cup beef broth
  • 2 cups fresh spinach
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat the oil over medium-high heat. Add the ground beef and cook, stirring occasionally, until browned. Drain off any excess fat.
  2. Add the onion and garlic and cook, stirring occasionally, until the onion is translucent, about 5 minutes.
  3. Add the curry powder, cumin, coriander, garam masala, turmeric, and ginger and stir to combine. Cook for 1 minute.
  4. Add the tomato paste and cook for 1 minute.
  5. Stir in the diced tomatoes, coconut milk, and beef broth and bring to a simmer. Simmer for 10 minutes.
  6. Add the spinach and stir to combine. Simmer for 5 minutes.
  7. Taste and season with salt and pepper as needed.
  8. Serve over cooked rice or noodles.
