Ingredients
- 3 ripe bananas, mashed
- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the mashed bananas, pumpkin puree, flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Set aside.
- In a separate bowl, mix together the melted butter, brown sugar, eggs, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing and serving.
