Ingredients
- 1 loaf of pumpkin bread, cut into cubes
- 2 eggs
- 2 cups of whole milk
- 1/2 cup of brown sugar
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground nutmeg
- 1/4 teaspoon of ground allspice
- 1/4 teaspoon of ground cloves
- 1/4 teaspoon of salt
- 1/2 cup of chopped pecans
- 1/2 cup of dried cranberries
- 1/2 cup of butter, melted
- 1/2 cup of all-purpose flour
- 1/2 cup of brown sugar
Directions
- Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
- In a large bowl, whisk together the eggs, milk, 1/2 cup of brown sugar, cinnamon, nutmeg, allspice, cloves and salt. Add the pumpkin bread cubes, pecans and cranberries, and mix until all of the bread cubes are evenly coated.
- Pour the mixture into the baking dish. In a medium bowl, mix together the melted butter, flour, and 1/2 cup of brown sugar. Sprinkle the crumb topping evenly over the top of the bread pudding.
- Bake for 40-45 minutes, or until the top is golden brown. Let cool for 10 minutes before serving.
