Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon cumin
  • ¼ teaspoon salt

Directions

  1. Preheat oven to 400 degrees F. Place the diced sweet potato onto a baking sheet and bake for 15 minutes, or until tender.
  2. In a food processor, combine the cooked sweet potato, chickpeas, garlic, tahini, olive oil, lemon juice, cumin, and salt. Blend until smooth and creamy.
  3. Serve with pita chips or fresh vegetables.
