- 1 large sweet potato, peeled and diced

Directions
- Preheat oven to 400 degrees F. Place the diced sweet potato onto a baking sheet and bake for 15 minutes, or until tender.
- In a food processor, combine the cooked sweet potato, chickpeas, garlic, tahini, olive oil, lemon juice, cumin, and salt. Blend until smooth and creamy.
