Ingredients
- 2 tablespoons butter
- 4 slices rye bread
- 4 slices Swiss cheese
- 4 ounces corned beef, thinly sliced
- 1/2 cup sauerkraut, rinsed and drained
- 1/4 cup Thousand Island dressing
Directions
- Melt the butter in a large skillet over medium heat.
- Add the rye bread to the skillet and toast until golden brown, about 2 minutes per side.
- Top each slice of toast with a slice of Swiss cheese.
- Add the corned beef to the skillet and cook until heated through and lightly browned, about 2 minutes.
- Divide the corned beef among the four slices of toast.
- Top each slice with the sauerkraut and Thousand Island dressing.
- Fold each sandwich in half and serve.
