Ingredients

  • 2 tablespoons butter
  • 4 slices rye bread
  • 4 slices Swiss cheese
  • 4 ounces corned beef, thinly sliced
  • 1/2 cup sauerkraut, rinsed and drained
  • 1/4 cup Thousand Island dressing

Directions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the rye bread to the skillet and toast until golden brown, about 2 minutes per side.
  3. Top each slice of toast with a slice of Swiss cheese.
  4. Add the corned beef to the skillet and cook until heated through and lightly browned, about 2 minutes.
  5. Divide the corned beef among the four slices of toast.
  6. Top each slice with the sauerkraut and Thousand Island dressing.
  7. Fold each sandwich in half and serve.
