Ingredients

  • 4 cups vegetable broth
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 clove garlic, minced
  • 1 teaspoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon miso paste
  • 1 package ramen noodles
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 cup carrots, sliced
  • 1/2 cup green onions, sliced
  • 1 tablespoon sesame seeds
  • 1/4 cup fresh cilantro, chopped

Directions

  1. In a large pot, heat the vegetable broth, sesame oil, ginger, garlic, soy sauce, rice vinegar, and miso paste over medium heat, stirring until the miso paste has dissolved.
  2. Add the ramen noodles and simmer for 5 minutes.
  3. Add the mushrooms, bok choy, carrots, and green onions and simmer for an additional 5 minutes, or until the vegetables are tender.
  4. Remove from heat and stir in the sesame seeds and cilantro.
  5. Serve hot.
