Ingredients
- 4 cups vegetable broth
- 1 teaspoon sesame oil
- 1 teaspoon ginger, minced
- 1 clove garlic, minced
- 1 teaspoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon miso paste
- 1 package ramen noodles
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 1 cup carrots, sliced
- 1/2 cup green onions, sliced
- 1 tablespoon sesame seeds
- 1/4 cup fresh cilantro, chopped
Directions
- In a large pot, heat the vegetable broth, sesame oil, ginger, garlic, soy sauce, rice vinegar, and miso paste over medium heat, stirring until the miso paste has dissolved.
- Add the ramen noodles and simmer for 5 minutes.
- Add the mushrooms, bok choy, carrots, and green onions and simmer for an additional 5 minutes, or until the vegetables are tender.
- Remove from heat and stir in the sesame seeds and cilantro.
- Serve hot.
