Ingredients

  • 1 cup teff flour
  • 1/2 cup almond flour
  • 2 tablespoons coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil, melted
  • 1/2 cup almond milk
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract

Directions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the teff flour, almond flour, coconut sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, almond milk, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
