- 1 cup teff flour
- 1/2 cup almond flour
- 2 tablespoons coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon

- 1/4 cup coconut oil, melted
- 1/2 cup almond milk
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
Directions
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, whisk together the teff flour, almond flour, coconut sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together the melted coconut oil, almond milk, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
