Ingredients

  • 1 block of extra-firm tofu
  • 1 cup of mushrooms, finely chopped
  • 1/2 cup of breadcrumbs
  • 1/4 cup of vegan mayonnaise
  • 1/4 cup of onion, minced
  • 1/4 cup of green bell pepper, minced
  • 2 tablespoons of soy sauce
  • 1 teaspoon of garlic powder
  • 1 tablespoon of fresh parsley, chopped
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of freshly ground black pepper
  • For the glaze:
    • 1/4 cup of ketchup
    • 2 tablespoons of vegan Worcestershire sauce
    • 2 tablespoons of brown sugar
    • 1 tablespoon of apple cider vinegar

Directions

  1. Preheat oven to 375°F.
  2. Crumble the tofu into a large bowl.
  3. Add the mushrooms, breadcrumbs, vegan mayonnaise, onion, bell pepper, soy sauce, garlic powder, parsley, smoked paprika, cumin, and black pepper. Mix until all of the ingredients are evenly distributed.
  4. Shape the mixture into a loaf, and place it in a greased baking dish.
  5. In a small bowl, mix together the ketchup, Worcestershire sauce, brown sugar, and apple cider vinegar to create the glaze.
  6. Spread the glaze over the top of the loaf.
  7. Bake for 30-35 minutes, or until the top is golden and the center is cooked through.
  8. Let the loaf cool for 10 minutes before serving.
