Ingredients
- 1 block of extra-firm tofu
- 1 cup of mushrooms, finely chopped
- 1/2 cup of breadcrumbs
- 1/4 cup of vegan mayonnaise
- 1/4 cup of onion, minced
- 1/4 cup of green bell pepper, minced
- 2 tablespoons of soy sauce
- 1 teaspoon of garlic powder
- 1 tablespoon of fresh parsley, chopped
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of freshly ground black pepper
- For the glaze:
- 1/4 cup of ketchup
- 2 tablespoons of vegan Worcestershire sauce
- 2 tablespoons of brown sugar
- 1 tablespoon of apple cider vinegar
Directions
- Preheat oven to 375°F.
- Crumble the tofu into a large bowl.
- Add the mushrooms, breadcrumbs, vegan mayonnaise, onion, bell pepper, soy sauce, garlic powder, parsley, smoked paprika, cumin, and black pepper. Mix until all of the ingredients are evenly distributed.
- Shape the mixture into a loaf, and place it in a greased baking dish.
- In a small bowl, mix together the ketchup, Worcestershire sauce, brown sugar, and apple cider vinegar to create the glaze.
- Spread the glaze over the top of the loaf.
- Bake for 30-35 minutes, or until the top is golden and the center is cooked through.
- Let the loaf cool for 10 minutes before serving.
