Ingredients

  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup warm water
  • 1/2 cup cooked and shredded pork or beef
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon smoked paprika
  • 1/4 cup frozen corn
  • 1/4 cup canned black beans, drained and rinsed
  • 1/2 cup shredded cheese
  • 1/4 cup salsa

Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the cornmeal, flour, baking powder, and salt. Add the oil and warm water and mix until combined.
  3. Press the dough into the bottom and up the sides of a greased 9-inch pie plate.
  4. In another bowl, combine the pork or beef, onion, bell peppers, chili powder, cumin, garlic powder, oregano, paprika, frozen corn, black beans, cheese, and salsa. Mix until combined.
  5. Spread the filling over the crust in the pie plate, pressing it down into the crust.
  6. Bake for 25-30 minutes, or until the crust is golden brown and the filling is hot and bubbly.
  7. Let cool for 15 minutes before serving.
