- 1/2 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 1/2 cup warm water
- 1/2 cup cooked and shredded pork or beef
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon smoked paprika
- 1/4 cup frozen corn
- 1/4 cup canned black beans, drained and rinsed
- 1/2 cup shredded cheese
- 1/4 cup salsa
Directions
- Preheat the oven to 350°F.
- In a large bowl, combine the cornmeal, flour, baking powder, and salt. Add the oil and warm water and mix until combined.
- Press the dough into the bottom and up the sides of a greased 9-inch pie plate.
- In another bowl, combine the pork or beef, onion, bell peppers, chili powder, cumin, garlic powder, oregano, paprika, frozen corn, black beans, cheese, and salsa. Mix until combined.
- Spread the filling over the crust in the pie plate, pressing it down into the crust.
- Bake for 25-30 minutes, or until the crust is golden brown and the filling is hot and bubbly.
- Let cool for 15 minutes before serving.
