Ingredients
- 2 cups pet milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
- 2 eggs, beaten
- 2 teaspoons vanilla extract
- 1/4 cup butter, melted
- Optional: 1/2 cup raisins or currants
Directions
- In a medium saucepan, combine the pet milk, sugar, salt, and cornstarch. Whisk until the cornstarch is dissolved.
- Place the saucepan over medium-high heat and bring to a boil, stirring constantly.
- In a medium bowl, beat the eggs until light and fluffy.
- Slowly add the hot milk mixture to the eggs, whisking constantly.
- Pour the egg-milk mixture back into the saucepan and cook over medium heat, stirring constantly, until the pudding thickens, about 5 minutes.
- Remove from heat and stir in the vanilla and butter.
- Pour the pudding into a bowl and let cool.
- If desired, stir in the raisins or currants.
- Serve warm or chilled.
