Ingredients
2 cups pet milk
1/4 cup sugar
1/4 teaspoon salt
2 tablespoons cornstarch
2 eggs, beaten
2 teaspoons vanilla extract
1/4 cup butter, melted
Optional: 1/2 cup raisins or currants
Directions
In a medium saucepan, combine the pet milk, sugar, salt, and cornstarch. Whisk until the cornstarch is dissolved.
Place the saucepan over medium-high heat and bring to a boil, stirring constantly.
In a medium bowl, beat the eggs until light and fluffy.
Slowly add the hot milk mixture to the eggs, whisking constantly.
Pour the egg-milk mixture back into the saucepan and cook over medium heat, stirring constantly, until the pudding thickens, about 5 minutes.
Remove from heat and stir in the vanilla and butter.
Pour the pudding into a bowl and let cool.
If desired, stir in the raisins or currants.
Serve warm or chilled.
