Ingredients
- 4 bell peppers, halved and seeds removed
- 1 can tuna, drained
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped carrots
- 1/2 cup cooked rice
- 1/4 cup grated cheese
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Preheat oven to 375°F.
- In a bowl, combine tuna, onion, celery, carrots, rice, cheese, breadcrumbs, olive oil, salt, and pepper.
- Stuff each pepper half with the tuna mixture.
- Place the stuffed peppers in a baking dish and bake for 25-30 minutes, until the peppers are tender and the filling is heated through.
- Serve warm.
