Ingredients
- 1 cup (2 sticks) butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- 1 cup (6 ounces) semisweet chocolate chips
Directions
- Preheat oven to 350 degrees F.
- In a medium bowl, cream together butter and sugar until light and fluffy.
- Add flour, salt, and vanilla extract, and mix until well combined.
- Press dough into an ungreased 9x13-inch baking pan.
- Bake for 20 minutes, or until golden brown.
- Remove from oven and let cool for 10 minutes.
- Spread peanut butter over cooled shortbread.
- Melt chocolate chips in a double boiler or in the microwave in 30-second intervals, stirring after each interval, until completely melted.
- Spread melted chocolate over peanut butter.
- Refrigerate for 30 minutes, or until chocolate is firm.
- Cut into bars and serve.
