- 6 slices bacon, cut into 1-inch pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon dried thyme

- 1 (16-ounce) package gnocchi
- 2 cups shredded sharp cheddar cheese
- 1/4 cup chopped fresh parsley, for garnish
Directions
- Heat a large pot over medium heat. Add the bacon and cook until crisp, about 5 minutes. Remove the bacon with a slotted spoon and set aside.
- Add the onion to the pot and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute.
- Sprinkle the flour over the vegetables and stir to combine. Cook for 2 minutes.
- Add the chicken broth, heavy cream, thyme, and pepper. Stir to combine and bring to a simmer.
- Add the gnocchi and cook according to the package instructions.
- Stir in the cheese until melted. Add the bacon and stir to combine.
- Serve the soup garnished with parsley.
