Ingredients
- 1 baguette, cut into 4 equal pieces
- 2 tablespoons olive oil
- 2 onions, thinly sliced
- 2 teaspoons sugar
- Salt and pepper, to taste
- 4 fresh figs, thinly sliced
- 2 cups arugula, washed and dried
- 4 ounces goat cheese, crumbled
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onions and sugar and cook, stirring occasionally, until the onions are caramelized and golden brown, about 10 minutes.
- Season the onions with salt and pepper, to taste, and set aside.
- To assemble the sandwiches, layer the baguette slices with the caramelized onions, figs, arugula, and goat cheese.
- Serve immediately.
