Ingredients

  • 1 baguette, cut into 4 equal pieces
  • 2 tablespoons olive oil
  • 2 onions, thinly sliced
  • 2 teaspoons sugar
  • Salt and pepper, to taste
  • 4 fresh figs, thinly sliced
  • 2 cups arugula, washed and dried
  • 4 ounces goat cheese, crumbled

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onions and sugar and cook, stirring occasionally, until the onions are caramelized and golden brown, about 10 minutes.
  2. Season the onions with salt and pepper, to taste, and set aside.
  3. To assemble the sandwiches, layer the baguette slices with the caramelized onions, figs, arugula, and goat cheese.
  4. Serve immediately.
