Ingredients

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups potatoes, peeled and cubed
  • 1 cup carrots, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Directions

  1. In a large pot over medium heat, melt the butter. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the chicken broth, potatoes, carrots, thyme, oregano, and black pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the vegetables are tender.
  3. Stir in the cream and heat through. Serve hot.
