In a medium bowl, mash the tofu with a fork. Stir in the Parmesan cheese, mozzarella cheese, parsley, garlic powder, black pepper, onion powder, Italian seasoning and red pepper flakes.
In a separate bowl, mix together the ricotta cheese, tomato sauce, basil and salt.
Fill each shell with about 1 tablespoon of the tofu mixture, then top with 1 tablespoon of the ricotta mixture. Place the shells in a 9x13 inch baking dish.
Bake in preheated oven for 20 minutes, or until shells are tender and lightly browned.
