Ingredients
- 1 package (14 ounces) firm tofu, drained
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/2 cup ricotta cheese
- 1/2 cup tomato sauce
- 1/4 cup chopped fresh basil
- 1/4 teaspoon salt
- 24 jumbo pasta shells
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mash the tofu with a fork. Stir in the Parmesan cheese, mozzarella cheese, parsley, garlic powder, black pepper, onion powder, Italian seasoning and red pepper flakes.
- In a separate bowl, mix together the ricotta cheese, tomato sauce, basil and salt.
- Fill each shell with about 1 tablespoon of the tofu mixture, then top with 1 tablespoon of the ricotta mixture. Place the shells in a 9x13 inch baking dish.
- Bake in preheated oven for 20 minutes, or until shells are tender and lightly browned.
