Ingredients
- 1/2 cup of butter, softened
- 1 cup of sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of milk
- 1/2 cup of cream cheese, softened
- 1/3 cup of your favorite fruit preserves (strawberry, raspberry, or apricot)
- 1/4 cup of sugar
- 1/4 cup of all-purpose flour
Directions
- Preheat oven to 350°F and grease a 9-inch round cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add to the creamed mixture alternately with the milk, beating well after each addition.
- Pour half of the batter into the prepared pan.
- Spread the cream cheese evenly over the batter.
- Spoon the fruit preserves over the cream cheese.
- Spread the remaining batter over the top.
- In a small bowl, combine the sugar and flour. Cut in the butter until the mixture is crumbly. Sprinkle over the top of the cake.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
