Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 2 tablespoons melted butter
- 1 large egg, lightly beaten
- 1/2 cup unsweetened coconut
- 1 ripe banana, mashed
Directions
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together the milk, melted butter, and egg.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the coconut and mashed banana.
- Heat a lightly greased pan over medium heat.
- Drop the batter, 1/4 cup at a time, onto the pan.
- Cook until lightly golden brown on each side.
- Serve warm with a dollop of butter and a drizzle of syrup.
