Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 large egg, lightly beaten
  • 1/2 cup unsweetened coconut
  • 1 ripe banana, mashed

Directions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In a separate bowl, whisk together the milk, melted butter, and egg.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Stir in the coconut and mashed banana.
  5. Heat a lightly greased pan over medium heat.
  6. Drop the batter, 1/4 cup at a time, onto the pan.
  7. Cook until lightly golden brown on each side.
  8. Serve warm with a dollop of butter and a drizzle of syrup.
