Ingredients
- 2 slices of bread
- 1 ripe avocado, pitted and mashed
- 2 tablespoons olive oil
- 1 clove of garlic, minced
- Salt and pepper to taste
- 2 eggs
Directions
- Toast the bread until golden and crispy.
- In a small bowl, mix together the mashed avocado, olive oil, garlic, salt, and pepper.
- Spread the avocado mixture on the toast.
- Bring a pot of water to a boil. Add the eggs and boil for 6 minutes.
- Remove the eggs from the water and peel. Cut in half and place on top of the avocado toast.
- Season with salt and pepper and enjoy!
