Ingredients

  • 2 slices of bread
  • 1 ripe avocado, pitted and mashed
  • 2 tablespoons olive oil
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • 2 eggs

Directions

  1. Toast the bread until golden and crispy.
  2. In a small bowl, mix together the mashed avocado, olive oil, garlic, salt, and pepper.
  3. Spread the avocado mixture on the toast.
  4. Bring a pot of water to a boil. Add the eggs and boil for 6 minutes.
  5. Remove the eggs from the water and peel. Cut in half and place on top of the avocado toast.
  6. Season with salt and pepper and enjoy!
