- 1 ripe avocado, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon coriander
- 1 can coconut milk
- 2 cups cooked basmati rice
- Salt, to taste
- Cilantro, for garnish
Directions
- Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, and spices. Cook, stirring, until the onion is softened, about 5 minutes.
- Add the avocado and cook for another 5 minutes, stirring occasionally.
- Add the coconut milk and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
- Stir in the cooked rice and season with salt to taste. Simmer for another 10 minutes.
- Serve the curry with cilantro as a garnish.
