Ingredients

  • 1 pound of pork tenderloin
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 apple, diced
  • 1 carrot, diced
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Directions

  1. Preheat oven to 375 degrees F.
  2. Cut pork into cubes and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the pork to the skillet and cook for 5 minutes, stirring occasionally.
  5. Add the onion, bell pepper, apple, carrot, and garlic and cook for an additional 5 minutes, stirring occasionally.
  6. Transfer the pork and vegetables to an oven-safe dish and bake for 20 minutes.
  7. Serve warm.
