Ingredients

  • 3 pounds beef chuck roast
  • 1/2 cup beef broth
  • 1/4 cup apple cider vinegar
  • 3-4 chipotle peppers in adobo sauce
  • 4 cloves garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 tablespoon smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup lime juice

Directions

  1. In a blender or food processor, combine the beef broth, apple cider vinegar, chipotle peppers, garlic, cumin, oregano, smoked paprika, onion powder, brown sugar, salt, black pepper, and lime juice. Blend until smooth.
  2. Place the beef chuck roast in a slow cooker and pour the sauce over it.
  3. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and easily shreds with a fork.
  4. Once the beef is cooked, remove it from the slow cooker and shred it using two forks.
