  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder

  • 1 tsp vanilla extract
  • 1/2 cup coconut milk

  • 1/2 cup shredded coconut, plus extra for garnish

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Add the coconut milk, lemon juice, and lemon zest, mixing well.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the shredded coconut.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  11. Transfer the loaf to a wire rack to cool completely.
  12. Once cooled, prepare the lemon glaze by whisking together 1 cup of powdered sugar and 2 tbsp of lemon juice.
  13. Drizzle the glaze over the top of the loaf and sprinkle with additional shredded coconut for garnish.
