Ingredients
- 1 cup butter, softened
- 2 cups granulated sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups applesauce
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 cups chopped walnuts
- 1 cup chopped dried fruit (raisins, apricots, etc.)
Directions
- Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla and applesauce.
- In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually stir the dry ingredients into the creamed mixture.
- Fold in the walnuts and dried fruit.
- Pour batter into the prepared pan. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
