Preheat oven to 375 degrees F (190 C). Grease a 9x13-inch baking dish with cooking spray.
In a medium bowl, mix together breadcrumbs, Parmesan cheese, garlic, olive oil, salt, and pepper.
Place eggplant slices in a single layer in the prepared baking dish. Sprinkle breadcrumb mixture over the top of the eggplant.
Bake for 25 minutes, or until eggplant is tender and golden brown.
Remove from oven and top with marinara sauce, mozzarella cheese, and chopped parsley. Return to oven and bake for an additional 5 minutes, or until cheese is melted and bubbly.
Remove from oven and serve.
