Ingredients
- 2 large eggplants, sliced into 1/4-inch rounds
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
Directions
- Preheat oven to 375 degrees F (190 C). Grease a 9x13-inch baking dish with cooking spray.
- In a medium bowl, mix together breadcrumbs, Parmesan cheese, garlic, olive oil, salt, and pepper.
- Place eggplant slices in a single layer in the prepared baking dish. Sprinkle breadcrumb mixture over the top of the eggplant.
- Bake for 25 minutes, or until eggplant is tender and golden brown.
- Remove from oven and top with marinara sauce, mozzarella cheese, and chopped parsley. Return to oven and bake for an additional 5 minutes, or until cheese is melted and bubbly.
- Remove from oven and serve.
