  • 3 red bell peppers
  • 1 fennel bulb, chopped
  • 1 small onion, chopped
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


  1. Preheat oven to 425°F.
  2. Cut peppers into 1/2-inch strips and place on a baking sheet.
  3. Combine fennel, onion, olive oil, lemon juice, salt, and pepper in a large bowl. Mix until combined.
  4. Add peppers to the bowl and mix until combined.
  5. Spread mixture onto baking sheet and roast in the oven for 15 minutes, or until peppers are tender.
  6. Remove from oven and serve immediately.
