  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1 1/4 cups granulated sugar
  • 3/4 cup finely ground almond meal/flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 cup creamy peanut butter
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 teaspoon salt


  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond meal/flour, salt, and chocolate chips until combined.
  3. In a large bowl, use an electric mixer to beat the egg whites and cream of tartar until soft peaks form.
  4. Gradually add the sugar and continue to beat until stiff peaks form.
  5. Gently fold in the almond meal/flour mixture, vanilla extract, almond extract, and peanut butter until just combined.
  6. Drop spoonfuls of the batter onto the prepared baking sheet, about an inch apart.
  7. Bake for 12-15 minutes, or until lightly golden brown.
  8. Remove from the oven and let cool completely before serving.
