Ingredients

  • 4 large apples, peeled and diced
  • 1 tablespoon cinnamon
  • 1 tablespoon brown sugar
  • 1 teaspoon nutmeg
  • 2 tablespoons butter
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 cup water
  • 1/4 teaspoon salt
  • Vegetable oil, for frying
  • Powdered sugar, for garnish

Directions

  1. In a large skillet, melt the butter over medium-high heat. Add the diced apples and cook until they are tender, about 5 minutes.
  2. Add the cinnamon, brown sugar, and nutmeg, and stir to combine. Cook for an additional 2 minutes.
  3. In a medium bowl, whisk together the flour, baking powder, water, and salt. The mixture should be the consistency of a thick pancake batter.
  4. Pour the batter into the skillet with the apples and stir to combine. Cook for 2-3 minutes, stirring frequently, until the batter is cooked through.
  5. Remove the skillet from the heat and allow the mixture to cool for 10 minutes.
  6. Using a spoon, scoop out a small amount of the apple mixture and shape into a chimichanga. Heat the vegetable oil in a large skillet over medium-high heat. Fry the chimichangas until golden brown, about 2 minutes per side.
  7. Drain the chimichangas on a paper towel-lined plate. Dust with powdered sugar, if desired.
  8. Serve the chimichangas warm with a scoop of ice cream or a cup of coffee.
