In a medium bowl, combine the cherries, sugar, cornstarch, vanilla and almond extracts, butter and cinnamon.
Mix until all ingredients are combined.
Place an egg roll wrapper on a dry work surface. Place 2 tablespoons of the cherry filling in the center of the wrapper.
Fold up the bottom corner of the wrapper and then fold in the two side corners. Dip your finger into the water and wet all of the edges of the wrapper.
Fold the top corner of the wrapper over and press to seal the edges. Place the egg roll onto a plate and repeat with the remaining wrappers and filling.
Preheat air-fryer to 350 degrees F.
Place the egg rolls in the air-fryer in a single layer. Fry for 8-10 minutes, or until golden brown.
Remove from the air-fryer and let cool for 5 minutes before serving.
