Ingredients

  • 2 sea bass fillets
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1/2 lime
  • Salt and pepper, to taste

Directions

  1. In a small bowl, mix together the garlic powder, smoked paprika, cumin, and oregano. Rub the mixture onto the sea bass fillets and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until the onion is softened and starting to brown, about 5 minutes.
  3. Add the cayenne pepper, chili powder, turmeric, and ginger and cook for another minute, stirring constantly.
  4. Add the white wine and chicken broth and bring the mixture to a boil. Reduce the heat to low and simmer for 5 minutes until the sauce has thickened slightly.
  5. Add the sea bass fillets to the skillet and spoon some of the sauce over the top. Cover and cook for 8 minutes until the fish is cooked through.
  6. Remove the skillet from the heat and stir in the cilantro and lime juice. Season with salt and pepper, to taste.
  7. Serve the sea bass with the sauce spooned over the top. Enjoy!
