Ingredients
4 boneless, skinless chicken breasts
1 cup Italian-style breadcrumbs
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1/4 teaspoon garlic powder
Salt and pepper to taste
Directions
Preheat oven to 375 degrees F (190 degrees C).
In a shallow bowl, mix together the bread crumbs, Parmesan cheese, garlic powder, and salt and pepper.
Dip each chicken breast in the olive oil, then into the crumb mixture, coating both sides.
Place chicken in a lightly greased 9x13 inch baking dish.
Bake in preheated oven for 25 to 30 minutes, or until chicken is cooked through and juices run clear.
Interesting Facts
This dish can easily be doubled to feed a larger family or group.
Try adding some crushed red pepper flakes to the crumb mixture for a spicy kick.
This dish is great served with a side of rice or roasted vegetables.
