Ingredients

  • 1 bunch of asparagus, washed and trimmed
  • 1/2 pound of mushrooms, such as cremini, shitake, or portobello, cleaned and cut into large chunks
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon of sea salt

Directions

  1. Preheat oven to 400F (200C).
  2. In a large bowl, combine the asparagus and mushrooms. Drizzle with olive oil and sprinkle with oregano, garlic powder, pepper, and salt.
  3. Spread the vegetables out in a single layer on a baking sheet.
  4. Bake for 15-20 minutes, or until the vegetables are golden brown and tender.
  5. Serve warm.
