Ingredients
1 bunch of asparagus, washed and trimmed
1/2 pound of mushrooms, such as cremini, shitake, or portobello, cleaned and cut into large chunks
1 tablespoon of olive oil
1 teaspoon of dried oregano
1 teaspoon of garlic powder
1/2 teaspoon of ground black pepper
1/2 teaspoon of sea salt
Directions
Preheat oven to 400F (200C).
In a large bowl, combine the asparagus and mushrooms. Drizzle with olive oil and sprinkle with oregano, garlic powder, pepper, and salt.
Spread the vegetables out in a single layer on a baking sheet.
Bake for 15-20 minutes, or until the vegetables are golden brown and tender.
Serve warm.
