Roasted Asparagus and Mushrooms

Ingredients
1 turkey breast, boneless and skinless
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
1/2 pound asparagus spears, trimmed and blanched
1/2 cup white wine
1/2 cup chicken stock
1/4 cup butter, melted
1/4 cup all-purpose flour
1/4 teaspoon nutmeg
1/2 cup heavy cream
1/2 cup hollandaise sauce
Directions
Preheat oven to 350 degrees F (175 degrees C).
Season turkey with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add turkey and cook for about 5 minutes per side, or until golden brown and cooked through.
Transfer turkey to a shallow baking dish.
Add asparagus spears to the baking dish with the turkey.
In the same skillet, pour the wine and chicken stock over medium-high heat and bring to a boil.
Whisk in the melted butter and flour and cook for about 2 minutes, stirring constantly.
Add the nutmeg and cream and stir until thickened.
Pour the sauce over the turkey and asparagus in the baking dish.
Bake in preheated oven for 20 minutes.
Remove from oven and serve with hollandaise sauce.

Turkey-A-La-Oscar was created in the late 1800s by the French chef, Auguste Escoffier.
Hollandaise sauce is a classic French sauce made from egg yolks, butter, and lemon juice.
Asparagus is an excellent source of vitamins A, C, E, and K.
