Ingredients

  • 1 whole chicken, cut into pieces
  • 2 tablespoons of olive oil
  • 2 onions, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 2 tablespoons of all-purpose flour
  • 1/2 teaspoon of paprika
  • 2 cups of low-sodium chicken broth
  • 1 cup of frozen peas
  • 2 cups of self-rising flour
  • 1/4 cup of butter, melted
  • 1/2 cup of milk

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the chicken and cook for 5 minutes, until the chicken is lightly browned.
  2. Add the onions, garlic, and thyme. Cook for 5 minutes, stirring occasionally.
  3. Add the flour and paprika. Cook for 1 minute, stirring constantly.
  4. Add the broth and bring to a boil. Reduce the heat and simmer for 20 minutes.
  5. Add the peas and simmer for an additional 10 minutes.
  6. Meanwhile, prepare the dumplings. In a medium bowl, combine the self-rising flour, melted butter, and milk. Mix until the dough comes together.
  7. Drop the dough by spoonfuls into the simmering broth. Cover the pot and simmer for 20 minutes.
