Ingredients

  • 2 pounds of carrots, peeled and cut into sticks
  • 1/4 cup of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • For the Tahini Lemon Sauce:
  • 1/4 cup of tahini
  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of water
  • 1 garlic clove, minced
  • 1 teaspoon of honey
  • 1/4 teaspoon of salt

Directions

  1. Preheat the air fryer to 400°F.
  2. In a large bowl, combine the carrots, olive oil, garlic powder, cumin, salt, and pepper. Toss to combine.
  3. Place the carrots in the air fryer basket in a single layer. Cook for 15 minutes, shaking the basket halfway through.
  4. Meanwhile, in a small bowl, whisk together the tahini, lemon juice, water, garlic, honey, and salt until smooth.
  5. When the carrots are done cooking, transfer to a serving dish and drizzle with the tahini lemon sauce.
  6. Serve immediately.
