Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons tequila
  • 2 tablespoons freshly squeezed orange juice
  • 1/4 cup chopped fresh cilantro
  • 4 (6-ounce) grouper fillets
  • Lime wedges, for garnish

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook, stirring, until softened, about 3 minutes.
  3. Stir in the cumin, chili powder, oregano, salt, and pepper and cook, stirring, for 1 minute.
  4. Add the lime juice, tequila, orange juice, and cilantro and cook, stirring, for 1 minute.
  5. Add the grouper fillets and cook, turning once, until the fish is just cooked through, about 5 minutes.
  6. Serve the grouper with the sauce and garnish with lime wedges.
