Ingredients

  • 1 package of mushroom ravioli
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 2 zucchinis, cut into cubes
  • 1/4 cup of white wine
  • 1/4 cup of vegetable broth
  • 1 tablespoon of truffle butter
  • Salt and pepper, to taste
  • 2 tablespoons of chopped parsley, for garnish

Directions

  1. Bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté for 1 minute. Add the zucchini and sauté for 4-5 minutes, stirring occasionally.
  3. Add the white wine and vegetable broth and bring to a simmer. Simmer for 3-4 minutes, until the liquid has reduced by half.
  4. Add the truffle butter and season with salt and pepper. Stir to combine.
  5. Drain the ravioli and add to the skillet. Simmer for 2-3 minutes, until the ravioli is heated through and the sauce has thickened.
  6. Garnish with parsley and serve warm.
