Ingredients

  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini
  • 1 cup fresh raspberries
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix together the oil, sugar, eggs and vanilla. Stir in the grated zucchini.
  3. In a separate bowl, combine the flour, baking soda, baking powder and salt. Stir the dry ingredients into the zucchini mixture until just blended.
  4. Gently fold in the raspberries. Pour the batter into the prepared pan.
  5. Bake for 45 minutes in the preheated oven, or until a knife inserted into the center of the loaf comes out clean.
