Ingredients
- 1 pound cucamelons, washed and cut into halves
- 1/2 cup white vinegar
- 1/2 cup water
- 2 tablespoons granulated sugar
- 1 tablespoon kosher salt
- 1 teaspoon whole black peppercorns
- 4 cloves garlic, peeled and smashed
- 4 sprigs fresh dill, chopped
Directions
- In a large glass or stainless steel bowl, combine the cucamelons, vinegar, water, sugar, salt, peppercorns, garlic and dill.
- Mix well to combine.
- Cover and refrigerate for at least 8 hours or overnight.
- Drain the cucamelons and transfer to a clean glass jar with a lid.
- Seal the jar tightly and store in the refrigerator for up to 2 weeks.
