Ingredients

  • 1 pound cucamelons, washed and cut into halves
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 tablespoons granulated sugar
  • 1 tablespoon kosher salt
  • 1 teaspoon whole black peppercorns
  • 4 cloves garlic, peeled and smashed
  • 4 sprigs fresh dill, chopped

Directions

  1. In a large glass or stainless steel bowl, combine the cucamelons, vinegar, water, sugar, salt, peppercorns, garlic and dill.
  2. Mix well to combine.
  3. Cover and refrigerate for at least 8 hours or overnight.
  4. Drain the cucamelons and transfer to a clean glass jar with a lid.
  5. Seal the jar tightly and store in the refrigerator for up to 2 weeks.
