Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups cooked legumes (chickpeas, black beans, etc)
- 1 carrot, diced
- 1 celery stalk, diced
- 1/4 cup dry white wine
- 1/4 cup vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 3 cups mashed potatoes
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.
- Stir in cooked legumes, carrot, celery, wine, broth, thyme, oregano, rosemary, salt, and pepper. Cook until vegetables are tender and liquid is almost evaporated, about 10 minutes.
- Transfer the mixture to a 9x13 inch baking dish.
- Spread mashed potatoes over the top and bake in preheated oven until potatoes are golden brown, about 20 minutes.
