2 cups cooked legumes (chickpeas, black beans, etc)
1 carrot, diced
1 celery stalk, diced
1/4 cup dry white wine
1/4 cup vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 cups mashed potatoes
Directions
Preheat oven to 400 degrees F (200 degrees C).
Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.
Stir in cooked legumes, carrot, celery, wine, broth, thyme, oregano, rosemary, salt, and pepper. Cook until vegetables are tender and liquid is almost evaporated, about 10 minutes.
Transfer the mixture to a 9x13 inch baking dish.
Spread mashed potatoes over the top and bake in preheated oven until potatoes are golden brown, about 20 minutes.
