Ingredients
3 eggs
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons grated lemon zest
2 tablespoons fresh lemon juice
2 cups all-purpose flour

Powder sugar for coating
Directions
In a large bowl, beat together eggs and sugar until light and fluffy.
Add baking powder, salt, lemon zest and lemon juice and mix until combined.
Add flour, 1/2 cup at a time, until a soft dough forms.
Roll the dough into 1-inch balls and place on a greased baking sheet.
Heat vegetable oil in a large skillet over medium heat. Fry the dough balls for 5 minutes, or until golden brown.
Remove from the skillet and place on a paper towel-lined plate to drain.
Once cooled, roll the balls in the powdered sugar to coat.
