Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • Powder sugar for coating

Directions

  1. In a large bowl, beat together eggs and sugar until light and fluffy.
  2. Add baking powder, salt, lemon zest and lemon juice and mix until combined.
  3. Add flour, 1/2 cup at a time, until a soft dough forms.
  4. Roll the dough into 1-inch balls and place on a greased baking sheet.
  5. Heat vegetable oil in a large skillet over medium heat. Fry the dough balls for 5 minutes, or until golden brown.
  6. Remove from the skillet and place on a paper towel-lined plate to drain.
  7. Once cooled, roll the balls in the powdered sugar to coat.
  8. Enjoy!
