Ingredients
- 3 eggs
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons grated lemon zest
- 2 tablespoons fresh lemon juice
- 2 cups all-purpose flour
- 1/2 cup vegetable oil
- Powder sugar for coating
Directions
- In a large bowl, beat together eggs and sugar until light and fluffy.
- Add baking powder, salt, lemon zest and lemon juice and mix until combined.
- Add flour, 1/2 cup at a time, until a soft dough forms.
- Roll the dough into 1-inch balls and place on a greased baking sheet.
- Heat vegetable oil in a large skillet over medium heat. Fry the dough balls for 5 minutes, or until golden brown.
- Remove from the skillet and place on a paper towel-lined plate to drain.
- Once cooled, roll the balls in the powdered sugar to coat.
