Ingredients

  • 1 cup cooked white rice
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup frozen vegetables of your choice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 large eggs, lightly beaten
  • 1 green onion, chopped

Directions

  1. Heat a large skillet over medium heat. Add the vegetable oil and swirl to coat the pan.
  2. Add the garlic and ginger and cook for 1 minute, stirring often.
  3. Add the frozen vegetables and cook for 2 minutes, stirring often.
  4. Add the cooked rice and soy sauce and cook for 5 minutes, stirring often.
  5. Push the rice and vegetables to the side of the skillet, and pour the beaten eggs into the empty side. Cook the eggs, stirring often, until they are scrambled and cooked through.
  6. Stir the eggs into the rice and vegetables and cook for 1 minute more.
  7. Remove the skillet from the heat and stir in the sesame oil and green onion.
  8. Serve warm.
