Ingredients
- 1 lb linguine
- 4-5 medium sized zucchini, sliced into thin strips
- 1/2 cup olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Directions
- Bring a pot of salted water to a boil and cook the linguine according to the package instructions.
- Heat the olive oil in a large skillet over medium heat. Add the zucchini and garlic and cook for about 5 minutes, stirring occasionally, until the zucchini is tender.
- Add the red pepper flakes, Parmesan cheese, and freshly chopped parsley. Stir to combine.
- Drain the cooked linguine and add to the skillet. Stir to combine.
- Season with salt and pepper to taste and serve.
